Vanitas, the signature Italian restaurant of Palazzo Versace Dubai, has introduced a delectable new menu, that offers a wonderfully laid-back interpretation of classic dishes with a contemporary twist. The new menu coincides with the appointment of new Chef de Cuisine, Marco Legittimo, who created each dish with the discerning Dubai foodie, in mind.
Having worked at some of the most renowned restaurants in Europe and the Middle East, Marco, together with his talented team strike the perfect balance between taste and aesthetics with beautiful presentation.
The exquisite new menu features stunningly hand-crafted dishes to take you on a culinary journey through Italy. Tease your taste buds with Cured Black Angus Beef Carpaccio with Hon Shimenji Mushroom, Rocket Pesto, Parmigano and Black Truffles or Tuna Tartare featuring Strawberry Gazpacho and 25 years aged Balsamico.
No Italian menu is complete without a plentiful pasta selection and Chef Marco has created an array of homemade, fresh pasta dishes to cater for every taste. Lobster Agnolotti, served with Zucchini Cream and Oscietra Caviar will prove a wonderfully refined dish, with the Duck Tortelli, Castelmagno Cheese Fondue, Crispy Duck Ham and Hazlenut Crumble offering a deliciously rich approach to Italian cuisine. Alternatively, opt for a creamy risotto dish, such as Fava Beans and Mint Risotto, complete with Pecorino Foam.
Meat and fish lovers will be delighted with Chef Marco's new creations, with a superb range of flavours on offer, from Grilled Wagu Beef Striploin, served with Caramelized Shallots, Grilled Eryngii Mushroom, Porcini Cream and Rocket Pesto to Sea bass Fillet cooked on aromatic salt, Cannellini Beans and Baby Spinach.
Chef Marco has brought a fresh approach to Vanitas, recreating the atmosphere of a relaxed restaurant on the Italian Riviera. "At Vanitas, everything is about the relaxed Italian way of doing things - simple ingredients, chilled atmosphere, and extraordinary tastes," says Marco, who invites the guests to succumb to the charms of the venue and the authenticity of his Italian food served at Palazzo Versace Dubai's signature restaurant.
Before joining Palazzo Versace Dubai, Marco was the Head Chef of Bussola restaurant at Westin Mina Seyahi, Dubai, from 2011 to 2017. During his 20-year career, Marco has also been awarded "Ospitalita Italiana" Certificate of Italian Authenticity from the Italian Chamber of Commerce and "Italian Master Chef de Cuisine" from Academia Barilla.
